Green Tomato Salsa

This is the end of the growing season and you may have so many green tomatoes to pick from your garden. This green tomato salsa is made with the last harvest from my garden. This tasty dip is ideal with wholegrain crackers.


1 Cup of green cherry tomatoes or 1 cup of large green tomatoes, chopped
8 Anchovies in olive oil, drained
Half red onion, roughly chopped
1 green chilli
1tsp Lemon juice

Grill green tomatoes, green chilli and red onion. Cook until lightly charred and let them cool.

Finely chop them along with anchovies. It's better to use a food processor or mini chopper to do this part. 

Add lemon juice and mix.
