Warm Quinoa Salad with Pan Fried Tomatoes on Vine

Very delicious complete meat free meal that is low in saturated fat and salt, packed with fibre, protein, antioxidants, vitamins and minerals. This is an ideal detox meal to try after continuous partying and binging on fatty, sugary foods.

Ingredients

2 Strings of Cherry tomatoes on the vine
1tsp Composed Olive oil
1 Cup cooked Quinoa
1 Red Onion, sliced
1 Beet root, sliced
1 Red apple, sliced
3 Sprigs of fresh Thyme
Pinch of Crushed Black Pepper
½ tsp Salt

Method

To begin, put a medium frying pan over medium heat with a tsp of oil. Place cherry tomatoes on vine in the pan and reduce to a low heat. Sprinkle crushed black pepper and a pinch of salt to it. Cook until the skin of tomatoes burst open. Gently remove from pan.

Into the same pan on medium heat add sliced red onion and beetroot, cook for 2 minutes stirring occasionally. Now add sliced apple pieces to it, cover and cook for couple more minutes. Then add thyme leaves and rest of the salt to it. Stir and combine well and add cooked quinoa into it. Mix well and turn off the heat. Serve it warm with tomatoes on side.
