Pineapple and cranberry salsa with tarragon

Immune boosting, low calorie food packed with antioxidant, anti-inflammatory, anti-histamine and digestion aiding compounds.This recipe is ideal for Hay fever management. If cranberries are not in season, use 1/4 cup dried cranberries as they are high in sugar. 

Salad is very vibrant and fresh tasting and it will make you feel good and better.

Spicy roasted aubergine dip

This is the simplest aubergine recipe I have ever made. The creaminess of roasted aubergines goes well with charred chilli and tamarind. It is simply irresistible as a dip or as an accompaniment with cooked fluffy rice.

Ingredients

1 Large aubergine
1 Red dried chilli
Tamarind, (raspberry sized ball)
Salt, to taste
Olive oil to brush

Spaghetti with swiss chard and peas

This is a light and nutritious recipe that is perfect to enjoy any sunny evening. Swiss chard and mint I used in this recipe comes from my small back garden. There are plenty of them at the moment and my mind is in a constant process of finding ways to use them up. The beautiful red and yellow stalks of swiss chard added extra bite to my recipe, but you can use store bought swiss chard if you don’t grow them.
