Watermelon and Plum Smoothie

This refreshing smoothie is rich in electrolytes and antioxidant nutrients and is ideal as a workout/sports drink. Most of us over-consume sodium, but many people get less than required amount of potassium. It is important to balance the ratio of minerals like sodium and potassium for the proper functioning of the body.

Soft and Moist Vegan Christmas Pudding

Christmas isn’t Christmas for many of us without a traditional pudding. I would prefer to make it at home when buying it from local supermarket is the easiest option. But the decision to make it at home gives us the option to choose healthiest ingredients with high nutritive value.

Moroccan spiced Couscous and chickpea cake

Couscous comes handy when we need a quick lunch or snack and we all look for quick fixes sometimes. It will be more of a joy if we can make it healthy for our family. These tasty couscous cakes are easy to pack and that makes it ideal for packed lunches or snacks. It will perfectly go with any stew or curry.

Ingredients

Buckwheat and Mushroom Risotto

Risotto often brings that comforting feeling to mind. This hearty buckwheat and mushroom risotto is no exception. Buckwheat is a wonder grain in a sense as it comes with numerous health benefiting qualities. It neither comes from a grass family nor closely associated with wheat as the name suggests.

Autumn comfort soup in a bowl

Autumn reminds us about comfort eating somehow. The reason could be lack of sunshine or cold wet days. Usually when we choose food for comfort, we tend to choose fatty, sugary and salty foods. But unlike many other so called comfort foods this soup is highly nutritious and healthy.

Spinach and Butternut Squash Curry

Growing your own vegetables is always very satisfying and so is making a curry. There are plenty of small pumpkins, chillies, tomatoes and spinaches in my garden now. So I always find ways to use them up. I usually make this curry with butternut squash, but I used small pumpkins instead of squash this time just because there are so many of them to pick.

Grilled Asparagus with Toasted Walnuts

Although the british growing season is over, we can still buy asparagus from supermarkets. This delicate green vegetable is very low in caloires and is packed with vitamin A, C & E, folic acid, potassium and iron. Walnuts are high in vitamin E, a powerful antioxidant and it is in a highly beneficial form. They contain high amount of plant based omega-3 fatty acids, protein, magnesium, phosphorus and fibre.

Spaghetti with swiss chard and peas

This is a light and nutritious recipe that is perfect to enjoy any sunny evening. Swiss chard and mint I used in this recipe comes from my small back garden. There are plenty of them at the moment and my mind is in a constant process of finding ways to use them up. The beautiful red and yellow stalks of swiss chard added extra bite to my recipe, but you can use store bought swiss chard if you don’t grow them.
